A simple, tasty recipe. The carrots and onions came out rather firm following these directions, even with a little extra baking, so you may want to adjust the recipe to cook the carrots and onions ahead of time if you prefer them soft.
Note to self: Try browning the onions first next time, as the onion flavor is a little too pronounced for some people.
Broccoli may be a good addition (or substitute for the carrots), though I haven't tried it yet.
